Let’s illustrate with a can of minestrone. The ingredients list starts with water, followed by diced tomatoes, diced onions, carrots, kidney beans, potatoes, and celery, and there are no animal products listed. The nutrition facts label (here) lists the cholesterol content as zero, as we’d expect. The saturated fat content is also zero (your heart is happy about that), and total fat is only 1.5 grams in a 1-cup serving, so that’s good, too. The sodium content, 290 milligrams, is fine. So this product is indeed vegan, low in fat, and a good choice.

So, as you have seen, a vegan diet does not require spending any more time in the kitchen than you want to. It fits into any lifestyle. In the next chapter, we will have a look at healthy eating when you are on the road or out on the town.
